I was given the responsibility of preparing the dessert portion of our next upcoming family celebration. Since my daughter can’t have sugar, dairy or ANY artificial flavorings, I decided to make a cake that was healthy, that she could actually enjoy, and not feel excluded in the dessert fun. Now, I am terrible in the kitchen, however, my cake was such a success, that I decided to share it. (Yes, I also purchased a cheesecake for the dairy lovers, and Yes, I also added Yevo to my cake)
The recipe to my amazing creation:
1 cup agave
1/2 cup coconut oil
2 tsp vanilla
1 cup whole wheat flour
1/2 cup of Yevo oatmeal ground up (to add protein and nutrients)
1 3/4 tsp. baking powder
1/2 cup of almond milk
Preheat the oven to 350 degrees
Mix liquids in one bowl
Mix flour, Yevo and powder in another bowl
Bake 30 minutes then enjoy!
