It’s that time of year! Pumpkin EVERYTHING! Pie, Latte’s, ice cream, muffins and breads! The day after my three pumpkins were carved by the kids into amazingly creative Jack o lanterns, I prepped them for making all my favorite goodies for months to come. Below is a recipe that I discovered a few years back when I wanted to bake something pumpkin with what ever ingredients I had in my house at the time, and keep it healthy and low calorie.
Prep time: 5 minutes, Yields: 8 servings
6 Ingredients:
- 16 oz pumpkin ( I use fresh. Just cut up the pumpkin bake at 350 for about 20 minutes, then peal it, and mash.
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1 1/4 almond milk
- 2-3 teaspoon pumpkin pie spice, depending on taste preference
- 1/2 cup agave or preferred sweetener of your choice
Directions:
Mix everything in a bowl and bake at 350 for 50 minutes
Let cool for one hour, or eat warm if you can’t wait.
Additional Options:
Serve in waffle bowl
Serve a la mode with ice cream. OMG
Top with whipped cream
Add pumpkin protein powder for the additional health benefits. Making it a complete breakfast.
